Seated next to the river of its name, that is born in the Alhama Mountain range, Salar is probably called this way due to the existence of some salt industry today disappear, because of the abundance of salt mines in the Western Granada territory. The natural surroundings of Salar stand out by its beauty and they can be verified from many points, like the Fuente Alta or the Cruz de Marino. In the limit of its district with Loja is the so called Monea Cave that keeps stalactites and stalagmites. On the other hand, the Cave of the Bañuelo is a semi thermal water spring.
In the area where this town is located archaeological vestiges of the Superior Neolithic period have been found. They have also been found Roman remains, like the ruins of Gabino. The tradition says that Salar has its origin in the medieval fortress conquered by Hernán Perez del Pulgar to the Muslims the 30th of May of 1486, during the siege of Loja. Feat by which it would receive in 1490 from the Catholic Kings possession of the villa, next to the appointment of mayor and the order of repopulate the place. It was tie to the town of Loja until 1817. During the war of Independence against the French troops its citizens participated actively, as well as in the farmer revolts of the XIX century.
The olive oil is one of the protagonists of the gastronomy from Salar. It is used in diverse dishes, like remojones, the borrachuelos, the San Antón pot, hornazos and candies. Salar has a hunting boundary where they hunt animals to elaborate recipes like the rice with hare or partridge.
