Fire and water, symbols of the sun and sea, are the main protagonists of this event. The celebration is in honour of San Juan but also has become a celebration of water, which is used to make other important local products such as ham.
Nicknamed the Water and Ham Festival, one of its highlights is the Noche del Agua. For one hour, starting at midnight on the day before, everyone throws water at each other. People either join in or watch the spectacle from their balconies.
The next morning a free ham tasting is organised for the whole town. A popular carnival parade known as La Publica is also celebrated on this day.
